Black Beans with a Puerto Rican Twist
Ingredients
| 2 cups dried black beans |
1 tbsp. chopped onion |
| 8 cups water |
1 tbsp. sweet Puerto Rican peppers |
| ½ lb. cooking ham* |
¼ tsp. chopped garlic |
| ¼ tsp. salt |
2 tbsp. chopped cilantro |
| 1 bay leaf |
1 tbsp. corn oil |
| ¼ tsp. oregano |
White rice, cooked |
Instructions
- Wash beans and soak overnight.
- Discard water and place beans in large pot.
- Add fresh water and cook on low for 1 hour.
- Cut ham into small cubes and sauté for 5 minutes.
- Add remainder of ingredients (excluding the beans and rice) and sauté for 3 minutes. Add all ingredients in step four into beans that have cooked for 1 hour. Cook for an additional 30 minutes.
- Serve with white rice.
Yield: 8 servings. Serving size: ¾ cup. 235 calories, 17.7 g protein, 5 g fat, 30.2 g carbohydrate, 16.8 mg cholesterol.
NOTE: This dish has lots of iron and fiber.
*Use low fat ham, or rinse the ham.
