Healthy Bean Burritos With Cheese

Ingredients

5 cups refried beans (canned, non-fat)
12 7-inch flour tortillas
6 Tbsp. low-fat sour cream
1 cup diced red and green peppers
1 cup diced tomatoes
1/2 cup fresh or frozen corn
1/2 cup scallion (using the white part and some green tops)
1 1/2 cups grated reduced-fat Cheddar cheese

 

Instructions

Warm the refried beans and tortillas in a 250-degree oven or a microwave. Spoon equal portions of beans and grated low-fat cheese onto the lower half of the tortilla. Fold the tortilla around the beans as if it were an envelope. Place a tablespoon of sour cream on top of each burrito and sprinkle the diced vegetables on top. (You may add 1 tablespoon of chopped cilantro to the sour cream mixture for color and flavor.)

Yield: Six servings (12 burritos).
