Raspberry Vinegar Marinade
This light, tangy, sweet marinade complements vegetable kabobs, fish or chicken.
Ingredients
¼ cup extra-virgin olive oil
¼ cup raspberry vinegar
¼ cup chopped green onions
1 tablespoon fresh lemon juice
1 tablespoon honey
1 tablespoon minced garlic
2 teaspoons dried thyme
¼ teaspoon freshly ground black pepper
Instructions
In a medium bowl, combine all the ingredients, mixing well, and set aside until ready to use. Makes about 1 cup.
